How to Adjust a Bizerba Slicer Gauge Plate

Slicer equipment is a staple in a variety of food service businesses from deli counters to sandwich shops. Maintaining these units is essential and keeping them adjusted makes a huge difference in the size of the meat or cheese slice you serve. Below we can help you figure out how to adjust a Bizerba slicer gauge plate so you can ensure that it slices evenly. 

Supplies Needed

  • Cut-resistant gloves
  • Socket wrench with 17mm socket
  • Torque wrench
  • Phillips screwdriver

Adjusting the Gauge Plate

While normally you would have to flip the unit over to access the internal components, this unit has access to the components when you are stationed below the unit on the ground. 

  • Step 1. Disconnect power – Before starting any adjustments, turn the unit off and unplug it from any power source to prevent injury or accidents. 
  • Step 2. Loosen bolts – Loosen the two angled bolts under the panel, making sure not to remove them completely. That should give you enough room to move the gauge plate.
  • Step 3. Adjust gauge plate – Carefully adjust the gauge plate, making sure the gap between the plate and the blade is 1 mm. You also want to make sure to have a step down from the plate to the blade. 
  • Step 4. Retighten bolts – Retighten the bolts back into a secure position. 
  • Step 5. Verify proper gap – Check and verify that the gauge plate and blade have the proper gap and step down along the blade. If the gauge plate has moved or is misaligned during retightening, repeat the above steps until it is safely in place.
