Most commercial food purveyor’s will have a fryer cleaner listed with there cleaning chemicals. Or a restaurant supply house.  Unfortunately they are lye based and require hazmat shipping.  Like these;https://www.webstaurantstore.com/fryer-puck-401304001-4-oz-deep-fat-fryer-cleaning-tablet-5-pack/999FRYERPUCK.html

I use Keating Sea powder Parts Town P#000394

    very simple and not caustic.

I believe it is all natural.

    as for directions:

empty and rinse frypot, fill with water and bring to a boil

add Sea powder and maintain 195F for 30 min.

I leave it in overnight and pretty much rinse/wipe out fry pot.

I also tend to throw in Hatco toaster baskets (TK-72 and TK100)

    as it makes these sparkle.

    Best of luck!

Stera Sheen Red Label has always been my personal favorite, some of my customers are not allowed to buy it as they are limited to “their stores approved list” so I order it for them. Really works well, I order from Allpoints, or Tundra, Or FMP which are all the same company now. I have seen it on Ebay, Amazon, etc…..
