    I have a 10.20 (model# OES 10.20) that is shutting down randomly. Usually when it’s full temp. I’ve replaced the thermocouple probe but still happening. Any ideas on whats next?

    Sounds like you have a Clevland oven. But I have no idea what control system, accessories it has. Do you see any trouble codes? Being it starts and runs a cycle before it quits, it sounds like corrupt software may be your issue. Before spending a lot of money on parts I would upgrade and reload the software to the machine. Combi ovens are extremely technical and have a lot of control sensors and feeds to do specific things. And they require very clean power to the control system to prevent problems down the road.

    This is an older unit and it isn’t sending error codes. Not sure what year it is

    It’s interesting that you say it happens when your at the high point. Normally I would ask why one would be using a Combi at high heat when the steam is the key to speed and food quality. But I won’t go there today. I’m guessing your oven is electric fired, and as such you may be having control issues from several possibilities. You say it’s a older model, so it probably has relays for the heat system. They sometimes weld and carry over. But you may also have a heat saturation problem with the control board. Often when a cooling fan gets age on it, it quits or slows down. Or dust and grease get into and on the airflow surfaces. Then the board errors. Lastly, check for a auto reset high limit to be opening.

    Then there is always the fan motor switch that shuts off the heat when it isn’t running at speed. This is inside the motor and can cause what you are describing with heat saturation.

    But before you get into it with big money, check all the communication cables for a good connection. Unplug, check cleanliness inside the plugs, and reconnect.
