We need to know how cool the oil temperature should get over night while turned off.

Not knowing or having any knowledge of what machine you are talking about,  I can’t provide a accurate answer.  Now since you did say OIL Temp. It makes me think of a fryer or oil filter. Type of shortening has a big factor in this.  As well as if the machine is designed for it.  Not all machines have a melting function for solid shortening..  Again, Make and model number please.

If your talking about a fryer, it can get to room temperature. But if you are talking about a oil filter, It should be pumped up after filtering to make it easy on the pump. There are brands that provide some minor heat to the filter and lines, But not many.

If it’s a basic atmospheric burner type of fryer, then the pilot burner remains lit at all times.  Therefore, the oil temp will remain quite warm from the heat from the pilot.

My guess?  90-100°F maybe.  I don’t know.  I’ve never measured it.

If that’s the case, then there’s no need to be concerned.
